Each Vinaigrette is unique. Like a family, each kid is related, but different, and reflects quirks of local design, history or ecology. Each building is special to its neighborhood and city. They all involved restoration; we take cool buildings that have fallen on rough times and renovate them, giving bright new life to dark old spaces in need of love. We plant trees and make gardens around our patios. We try, always, to create beautiful soulful spaces that relate to their environment and community, because we believe that rooted, meaningful design is transformative.
Santa Fe Vinaigrette
lives in a landmark adobe house at the end of a dusty lane in the historic northeast of town. Smaller and cozier than our other locations, with a gnarled old apricot shading our brick patio, the OG Vinny features fat double adobe walls dotted with Judith Bever’s produce-centric oil paintings, signature bright green tile, and happy bar pendants. This is where it all started!



Austin Vinaigrette
Just off of South Congress, in a low-slung mid-century building from the fifties that was once known as the Pig Stop, Vinaigrette ATX nestles in the shade of one of the oldest Live Oaks in town. Albuquerque Vinaigrette
In 2024, we moved our original Albuquerque location just two blocks east on the restaurant row that is Central Avenue, which is historic Route 66 as it crosses town. Its Southwest-meets-Art Deco facade is iconic, and recalls its mid-century history as a Route 66 motor lodge and gas and service station.
